DUCK MAGRET WITH RED PLUMS

DUCK MAGRET WITH RED PLUMS

Ingredients

  • 1 duck magret
  • 5 red plums
  • 2 shallots finely chopped
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp honey
  • Salt and pepper

Recipe

1 Slash and season duck skin.

2 Pit and half the plums.

3 Heat the frying pan at ⅔ of the maximum power of the stove, place magret skin side down.

4 Cook 5 to 6 minutes skin side down then flip and turn heat down to ⅓.

5 Continue cooking 8 to 10 minutes then transfer meat to wire rack. Let rest..

6 Add shallots to empty frying pan, cook for 5 minutes, and add vinegar and honey.

7 Add plums and simmer for 5 minutes, return magret to pan for 2 additional minutes.

8 Serve sliced magret with plums.

 

Tip : you can, after browning, finish cooking in 350 F oven for 8 to 12 minutes.
